Quick Chocolate-Chocolate Chip Cookies

With the holiday season approaching, I thought I would share my super fast chocolate-chocolate chip cookie recipe.  This is the recipe I turn to when I realize we have company on the way or an event that I somehow forgot about and I am FREAKING OUT because we have nothing to offer or bring along.  This is what I used to call our “Playdate Cookies” when the kiddos were younger.   They are super easy to make and taste oh so yummy!!

1 box of chocolate cake mix (we typically use Duncan Hines, it seems to make the softest, moistest (is that a word?!?) cookies

2 eggs

1/3 cup vegetable oil

1 cup chocolate chips

Set your oven to 350 degrees

Mix the first 3 ingredients together; the batter will be very stiff.

Fold in the 1 cup chocolate chips

Put onto cookie sheets in rounded tablespoons (I use a 1 inch cookie scoop and that makes quick work of it.)

Bake for about 12 minutes  – do not over bake!

Let them sit on the cookie sheet for about one minute, then transfer to a wire cooling rack.

Pour a class of milk and enjoy!!
